  1. Combine the sugar and water, bring to 240 degrees.
  2. When the sugar hits 240 degrees, start whipping the egg whites. Whip whites to medium soft peaks.
  3. Pour the melted sugar into the whipping egg whites, on low speed. Once all of the sugar has been added, increase the mixing speed to high and mix until incorporated.
  4. Lower speed and add shortening and butter, in small amounts, to the sugar and egg white mixture.
  5. Turn mixing speed back to high and mix for 4 minutes.
  6. Add in Irish cream and mix until all incorporated.
Recipe Notes

This recipe makes enough to frost and fill two 8" cakes or to frost 3 dozen cupcakes. You can also use it for a macaron filling or frosting for brownies. Recipe provided by Scratch Bakeshop.
