Roasted Delicata Squash with Agrodolce

  1. Preheat oven to 400°F.
  2. Season and toss the squash lightly with salt, drizzle with olive oil and place in a single layer on 1 or 2 baking sheets. Place into the preheated oven and cook 20-24 minutes, until tender and caramelized - flipping once.
  3. Meanwhile, place sliced onions and smashed garlic in a small bowl and add vinegar. Let sit while squash cooks. In a separate bowl, stir together a scant ½ cup extra virgin olive oil, maple syrup, chili flakes, and season with large pinch of salt.
  4. Once squash is cooked, let cool slightly and arrange on warm serving platter. Whisk together the onion mixture (remove smashed garlic) and oil mixture and generously brush onto squash. Scatter onions over top. Taste and adjust seasoning as needed.
  5. Garnish with chives or parsley before serving. Remaining Agrodolce can be stored in fridge for up to 3-4 days.
