  1. Preheat oven to 300 degrees.
  2. Line a baking sheet with parchment paper.
  3. In medium sized bowl, mix together rolled oats, pumpkin seeds, coconut flakes, salt, and set aside.
  4. In a small pan combine brown sugar, olive oil, and maple syrup. Whisking occasionally over medium heat bring this mixture to a light simmer being sure all sugar has dissolved. Pour syrup mixture over oats and mix together thoroughly.
  5. Spread oat mixture along your baking sheet. Bake about 45 minutes, until the granola is golden brown.
  6. Remove from oven and mix in dried apricots, dried currants, and toasted almonds.
  7. Allow to cool to a warm room temperature.
